Coffee brewing method: Kalita Wave 185
The Kalita Wave Dripper is a hand filter from the Japanese manufacturer Kalita. The Kalita Coffee Dripper is the most popular dripper among coffee fans and baristi around the world. With its extraordinary design, it also inspires those who are always looking for individual products. At home as well as outdoors you will succeed with a Kalita Wave to make a delicious coffee.
The professional hand filters from Kalita have a flat bottom with exactly 3 holes. This special shape favours an even extraction of the coffee. Kalita has also developed an undulating coffee paper filter for its drippers (hence the name). The wavy shape of the filter paper allows the water to drain evenly and constantly. This means that no coffee grounds are left behind at the edge of the filter. Kalita Wave 185 is suitable for preparing 2 to 4 cups of coffee.

Step 1.
Bring at least 500 ml of water to the boil. However, you should never forget never to pour boiling water over coffee. The ideal water temperature for most types of coffee preparation is between 92 and 96 °C. If the water is too hot, the coffee roasts and eventually tastes bitter. If the water is colder than 85 °C, the coffee is under-extracted and tastes watery to sour.
Step 2.
Place the Kalita Wave paper filter in the dripper and rinse it out. This will remove the smallest paper particles and the taste of the coffee will not be distorted. Take advantage of this opportunity and heat your cup or mug, so that the finished coffee does not lose its heat so quickly.
Step 3.
Now pour 32g of fine to medium coarse ground coffee (the particles should be about the size of a fine table salt) into the filter and tap lightly on the sides of the dripper to smooth the surface of the coffee powder. Make sure that the bed is completely flat. Place the Kalita Wave Dripper on a carafe or cup and both on a digital coffee scale. Then tare the scale to zero.
Step 4.
During the first 10 seconds, pour about 60 g of hot (non-boiling) water over the coffee powder and let it bloom. During this time the coffee powder swells and the fine coffee aromas begin to develop. For the blooming let 30 seconds pass quietly. Stir the coffee with a spoon.
Step 5.
Now pour in about 200g of water. For this process you need another 15 to 30 seconds. Pour the water in spiral movements from inside to outside. The spiral movement helps you to achieve a smooth extraction.
Step 6.
Now regularly add small amounts of water (approx. 25-50g water). By minute 2 your scale should read about 375g.
Step 7.
Add another 100 grams of water. This process should take another 20 seconds. Remove your cup and the Kalita Wave Dripper from the coffee scale.Now is the time to enjoy your coffee!
